There is no single best latex mattress for every sleeper. The useful question is which construction, firmness strategy, material profile, and return policy best matches your priorities.
Three kinds of adjustment
Modular layer rearrangement changes the order of different latex firmnesses. Split layers allow each partner to configure a side. Flippable mattresses provide two preset surfaces. These mechanisms solve different problems.

How to choose
Pick the mechanism you are actually willing to use. Maximum configurability has little value if you never want to lift or rearrange heavy latex layers.
Adjustment is only valuable if it is usable
A mattress can advertise customization yet make changes difficult, expensive, or impractical. Check whether adjustment happens by flipping, rearranging layers, replacing layers, exchanging components, or selecting a different configuration before shipment. Also check who pays shipping for exchanged components and whether changing a layer affects return eligibility.
Couples should inspect the split
If two sleepers need different firmnesses, ask whether the split applies only to the top layer or continues deeper into the support stack. A superficial split can change surface comfort; a deeper split can change support more substantially. Also verify how the cover keeps the halves aligned and whether each side can be serviced independently.
